Lemon Ice
There are a few recipes that have multiple versions. Lemon ice is one of them. I'm providing you both recipes below, and I used the version on the left, mostly because the version on the right seemed too full of itself. I just spent a hot and mildly humid week in Georgia with my husband and the idea of a lemon sorbet style dessert was too tasty to pass up, even after we got back to chilly Ohio.
Here's how I'm going to tackle this

Let's break this down into ingredients
- 3 Lemons
- Lemon Squeezer
- 1 Pint Sugar
- 1 Quart Sweet Milk
- 3 Egg Whites
- Freezer
Here's how I'm going to tackle this
All in all this is a pretty straightforward recipe. It even suggests that I freeze it which is more descriptive than some of the other recipes
1. Cut the lemons in half and juice the heck out of them into a bowl. I have a handheld squeezer that makes me feel strong I suggest you look into them. If you're like me and get seeds in there, scoops those out. Or play something similar to the King cake game, leave it in there, and likely lose whichever friend bites down on it and panics. Pour in a pint of sugar and a quart of milk and stir it around until it seems dissolved. I'm assuming the sweet milk just means milk that hasn't gone bad?
2. Beat 3 egg whites to stiff peaks and combine with your milk/sugar/lemons. Rocked the mixer and got the best peaks. Being careful not to stir the air out them.
3. Freeze for at least 6 hours or more likely overnight.

Verdict
I dug into this the day after I made it so it was good and frozen. It flaked like you think something with the word ice in the name should, which was satisfying. The tasters were split on this one. I found it to be odd and disappointing. It left a weird feeling in my mouth which I think may have been the egg whites. It was more sweet than it was lemony so I zested part of a lemon into my bowl and that improved the overall flavor. My husband, my best friend, and her husband all really liked it so I am in the minority but I'm also the expert of the group so I'm probably right.
If I did this again I would severely amp up the lemon with both zest and juice, maybe 6 lemons worth, and possibly try to find a milk substitute.
Take away
Lemon and milk are better apart than they are together.
"For earache: Take a bit of cotton batting, put on it a bit of black pepper, gather it up and tie it, dip it into sweet oil, and insert it into the ear; put a flannel bandage over the head to keep it warm; it often gives immediate relief."*
